  • 1 teaspoon salt
  • Cooking spray
  • 1 (3-pound) boned pork loin roast
  • 1 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger

    • 1 tablespoon brown sugar
    • 1 1/3 cups finely chopped dried apricots (1 (6-ounce) package)
