Grill-Roasted Pork Loin

Ingredients

  • 1 3-lb. center-cut pork loin
  • 1/8 tsp. kosher salt
  • 2 tsp. Dijon-style mustard
  • 1 tsp. salt
  • 2 cloves garlic, minced
  • 1 Tbs. dill seeds
  • 2 Tbs. cumin seeds, preferably toasted
  • + 7 more ingredients
    • ½ tsp. freshly ground black pepper
    • 2 tsp. fresh lime juice
    • 1 shallot, minced
    • 1/8 tsp. dried chile flakes
    • 1 tsp. freshly ground black pepper
    • 1 tsp. ground cinnamon
    • 1 cup plain yogurt

Combine all the marinade ingredients in a small bowl and rub over the pork loin. Cover the pork and refrigerate for 4 to 6 hours. Meanwhile, prepare the spice rub by combining all of the ingredients in a spice grinder.
