Ingredients

  • ¾ cup fine sea salt
  • 8 large fresh thyme
  • 2 teaspoons whole black peppercorns
  • 4 juniper berries
  • 6 Turkish bay leaves
  • 1 6- to 6 1/2-pound center-cut pork rib roast, well-trimmed
  • 6 quarts water
  • + 3 more ingredients
    • 1 ½ cups sugar
    • 2 teaspoons whole black peppercorns
    • 2 tablespoons fresh thyme

Combine 1 quart water and all remaining ingredients in medium saucepan. Bring to boil, stirring until sugar and salt dissolve.
