Herb-Roasted Pork Loin

Ingredients
- 1 ¾ cups chicken stock or low-sodium chicken broth
- 8 large thyme sprigs
- 1 (4-to 4 1/2-pound) boneless pork loin roast, trimmed
- 2 tablespoons garlic
- 8 savory sprigs
- 7 teaspoons olive oil
- 3 tablespoons Dijon mustard

- 2 teaspoons Dijon mustard

- 6 rosemary sprigs
- 1 ½ tablespoons all-purpose flour

Preheat oven to 350°F with rack in middle. Pat pork dry and season with 1 3/4 teaspoons salt and 1 1/2 teaspoons pepper.
