Roast Pork Porchetta-Style

Ingredients
- 1 (3 1/2-pound) boneless pork loin roast, trimmed
- 2 tablespoons crushed fennel seeds
- ½ teaspoon freshly ground black pepper
- 5 garlic cloves, minced
