Spice-Rubbed Pork Loin with Jalapeño-Lime Salsa

Ingredients

  • 2 tsp. sweet paprika, preferably Hungarian
  • ½ tsp. chipotle chile powder
  • 2 tsp. ground cumin
  • 2 Tbs. olive oil
  • 2 cloves garlic, minced
  • 1 tsp. granulated sugar
  • 1 Tbs. kosher salt
  • + 2 more ingredients
    • 1 recipe Jalapeño-Lime Salsa
    • 6-rib bone-in pork loin roast (4 to 5 lb.), chine bone removed, trimmed of excess fat

In a small bowl, mix the olive oil, salt, paprika, cumin, sugar, chipotle powder, and garlic. Rub all over the pork and refrigerate, covered, for at least 12 and up to 48 hours.
