Ingredients

  • 2 tablespoons olive oil, divided
  • Spice Rub
  • 1 teaspoon rubbed sage
  • 2 Granny Smith apples, cut into wedges
  • ½ cup finely chopped onion
  • Cider Sauce
  • 1 cup apple cider
  • + 6 more ingredients
    • ½ cup chopped dried apricots
    • 1/8 teaspoon pepper
    • 2 cups cornbread stuffing mix
    • ½ cup peeled and diced Granny Smith apple
    • 1 tablespoon butter
    • 2 (3-pound) boneless pork loin roasts, trimmed

Melt butter in large nonstick skillet over medium heat. Add onion and pepper, and sauté 6 to 8 minutes or until tender.
