  • 10 ounces fresh pork fat
  • 1 tablespoon ground sage
  • 1 ½ teaspoons dried thyme
  • 1 ¼ pounds lean pork tenderloin
  • Freshly ground pepper
  • 10 tablespoons unsalted butter
