Backyard Barbecue Ribs with Spicy Cola Barbecue Sauce
Ingredients
- One 12-ounce can spicy cola
- 1 teaspoon finely ground white pepper
- 1 teaspoon kosher salt
- 2 teaspoons ancho or New Mexican chili powder
- 3 tablespoons tomato paste
- 1/3 cup Worcestershire sauce
- ½ cup cider vinegar

- 1 cup ketchup
- 4 cloves garlic, chopped
- 1 large yellow onion, chopped
- 4 tablespoons (½ stick) unsalted butter
- ½ teaspoon cayenne pepper
- 1 teaspoon chipotle chili powder
- 1 ½ teaspoons coarsely ground black pepper
- ½ tablespoon hot smoked Spanish paprika
- 1 tablespoon kosher salt, preferably Morton's
- 1 tablespoon molasses powder, optional
- 2 tablespoons white sugar
- ½ cup packed dark brown sugar
- Spicy Cola Barbecue Sauce, recipe follows
- Hot and Sticky BBQ Rub, recipe follows
- Hickory or apple wood chips, soaked in water for 30 minutes
- 4 slabs St. Louis-style pork ribs, about 3 pounds each
Build a charcoal fire or preheat a gas grill. Set up the grill for indirect heat (300 degrees F).
