Ingredients

  • 1 cup(s) stock or broth
  • 1 small onion, very finely chopped
  • ½ cup(s) crumbled blue cheese, about 2 oz.
  • 1 pound(s) ground meat: beef, lamb, turkey, or pork
  • 1 clove(s) garlic, minced or pressed
  • ½ cup(s) dry white wine

In a wide pan (to speed reduction), boil onion, garlic, and wine until liquid is almost gone. Add stock and boil down to about 1/2 cup. Remove from heat, add cheese, and stir until sauce is smooth. Taste for seasoning. Shape meat into 4 patties. Salt very lightly, since the sauce is quite salty....
