Cajun-Style Country Ribs

Ingredients

  • 2 cups baby carrots
  • 1 large onion, coarsely chopped
  • 1 large green bell pepper, cut into 1 inch pieces
  • 1 large red bell pepper, cut into 1 inch pieces
  • 2 teaspoons garlic, minced
  • 2 tablespoons cajun seasoning, divided (or Creole Seasoning)
  • 3 ½-4 lbs pork ribs (country-style)

    • 1 (14 ½ ounce) can stewed tomatoes, undrained
    • 2 tablespoons water
    • 1 tablespoon water
    • 1 tablespoon cornstarch

1 Combine carrots, onion, bell peppers, garlic, and 2 tsp Cajun or Creole seasoning in slow cooker; mix well. 2 Trim excess fat from ribs. Cut into individual riblets.
