Ingredients

  • 2 tablespoons water
  • 1 tablespoon garlic
  • ¼ cup fresh flat-leaf parsley
  • about 16 (6-inch) wooden skewers, soaked in water
  • ½ pound ground veal
  • 6 slices bacon
  • 1 tablespoon seeded canned chipotles in adobo
  • + 8 more ingredients
    • ½ cup onion
    • 1 large egg
    • ¾ pound ground pork
    • 1 teaspoon ground cumin
    • 1/3 cup whole milk
    • 1/3 cup fine dry bread crumbs
    • ¾ teaspoon dried oregano
    • limes

Stir together milk and bread crumbs in a large bowl. Cook bacon in a 10-inch heavy skillet over medium heat, stirring occasionally, until crisp.
