  • 1 tablespoon canola oil
  • 2 (3 1/2-ounce) bags boil-in-bag long-grain rice
  • 1 cup snow peas
  • 4 lime wedges (optional)
  • 2 tablespoons shredded coconut
  • 1 tablespoon fish sauce
  • 1/3 cup light coconut milk
  • + 5 more ingredients
    • 1 teaspoon red curry paste (such as Thai Kitchen)
    • 1 teaspoon red curry powder
    • 1 (1-pound) pork tenderloin, trimmed
    • 1 cup bottled mango, cut into 1/2-inch pieces
    • ½ cup sliced green onions, divided

Prepare rice according to package directions, omitting salt and fat; drain. Cut pork into 1-inch cubes. Heat oil in a large nonstick skillet over medium-high heat.
