Fava Bean, Pea, and Artichoke Stew

  • 1 teaspoon salt
  • 2 cups onion
  • 2 ounces guanciale (smoked pork jowl) or pancetta
  • 5 tablespoons extra-virgin olive oil
  • 2 cups fresh fava beans or edamame (fresh soybeans)
  • 2 teaspoons fresh oregano
  • 2 cups fresh or frozen peas
  • + 5 more ingredients
    • 2 cups water
    • 2 lemons
    • 4 large artichokes
    • ½ teaspoon black pepper
    • ½ teaspoon fresh lemon juice
