Glazed Pork Tenderloin with Sugared Apples
Ingredients
- 1 pound pork tenderloin
- 3 Granny Smith apples, cored and sliced into 1/2-inch rounds
- 1 tablespoon lemon juice
- 1/3 cup honey
- 1 tablespoon ground coriander
- ½ cup pineapple juice
- 1/3 cup light brown sugar
Heat oven to 450° F. In a small bowl, whisk together the honey, coriander, and lemon juice. Brush the pork with half the marinade.
