Italian Pork, Squash and Tomatoes


  • 6 cup cooked rice
  • 1 (28-ounce) can no-salt-added whole tomatoes, crushed, with their juices
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 4 Roma (plum) tomatoes, quartered
  • 1 teaspoon minced garlic
  • 1 onion, coarsely chopped
  • + 4 more ingredients
    • 1 green bell pepper, seeded and coarsely chopped
    • 1 zucchini, sliced
    • 2 cup sliced yellow squash (about 3 squash)
    • 2 pound pork tenderloin, trimmed and cut into 1 1/2-inch cubes
