- 1 tablespoon shortening
- ½ cup dry red wine
- Natural or synthetic casings, prepared for use per instructions
- 3 pounds pork shoulder, cut into 1-inch cubes*
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 2 cloves garlic, minced
- + 6 more ingredients

- 1 ¼ teaspoons cayenne pepper
- 3 teaspoons salt
- 1/8 teaspoon dried rosemary
- 1 ½ teaspoons black pepper
- 1/8 teaspoon dried marjoram
- 1/8 teaspoon dried thyme
