Ingredients

  • 1 pork tenderloin (3/4 to 1 lb.)
  • Lime wedges
  • 1 to 2 teaspoons olive or salad oil
  • About ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon ground cumin
  • 1 teaspoon minced garlic
  • + 2 more ingredients
    • 1 tablespoon red wine vinegar
    • 1 tablespoon paprika

1. Rinse pork; trim and discard any fat. Place meat between sheets of plastic wrap. With a flat mallet, pound until meat is an even 1/4 inch thick. 2.
