Jerk Pork on Red Pepper Mayo and Black-Eyed-Pea Cakes

Ingredients

  • 19 tablespoons vegetable oil
  • 1 ½ cups yellow cornmeal
  • 1 ½ tablespoons coarse salt
  • 2 tablespoons ground cumin
  • 4 (15 1/2-ounce) cans black-eyed peas
  • 4 large garlic cloves
  • 1 ¼ cups fresh bread crumbs
  • + 7 more ingredients
    • ½ cup fresh cilantro
    • 2 large eggs
    • jerk pork
    • 3 red bell peppers
    • additional cornmeal for dusting
    • 1 cup mayonnaise
    • 3 tablespoons unsalted butter

Mash half of peas in a bowl with a fork and stir in remaining peas. Cook red peppers in butter in a large nonstick skillet over moderate heat, stirring, until barely softened.
