Pork and Peanut Stir-Fry
Ingredients
- ¼ cup plus 1 Tbsp. dry-roasted peanuts, chopped
- 2 (8 oz.) boneless pork chops, cut into thin strips
- 5 scallions, chopped, white parts separated from green
- 1 (2-inch) piece fresh ginger, peeled and grated
- 2 teaspoons vegetable oil
- 2 teaspoons cornstarch
- 1 tablespoon rice vinegar
- + 2 more ingredients

- ¼ cup low-sodium chicken broth or water
