Ingredients

  • ¼ cup plus 1 Tbsp. dry-roasted peanuts, chopped
  • 2 (8 oz.) boneless pork chops, cut into thin strips
  • 5 scallions, chopped, white parts separated from green
  • 1 (2-inch) piece fresh ginger, peeled and grated
  • 2 teaspoons vegetable oil
  • 2 teaspoons cornstarch
  • 1 tablespoon rice vinegar
  • + 2 more ingredients
    • 1 tablespoon soy sauce
    • ¼ cup low-sodium chicken broth or water
