Pork and Plantain Cuban Breakfast Hash


  • 2 tablespoons coconut oil
  • 1 egg, cooked however you’d like
  • salt and pepper, to taste
  • juice of ½ a lime
  • ½ teaspoon cumin
  • 1 garlic clove, minced
  • ¼ yellow onion, diced
  • + 3 more ingredients
    • ½ jalapeno, diced
    • ½ cup leftover easy shredded pork
    • 1 plantains, peeled and sliced in half lengthwise
