Ingredients

  • 4 teaspoons Shao Hsing rice cooking wine
  • 2 large egg whites
  • 14 fresh water chestnuts
  • ½ cup cornstarch
  • 1 cup scallions
  • ¼ teaspoon ground white pepper
  • 8 large flat Napa cabbage leaves

    • 8 Chinese dried mushrooms
    • 8 ounces ground pork butt
    • ½ fresh round won ton skins
    • 2 tablespoons cilantro
    • 1 tablespoon soy sauce
    • ¼ teaspoon salt
    • 1 ½ teaspoons sesame oil
    • 2 teaspoons sugar

In a medium bowl, soak the mushrooms in 1/2 cup cold water for 30 minutes, or until softened. Drain and squeeze dry (reserve soaking liquid for use in soups).
