Pork Dumplings

Ingredients

1 ¾ cups all-purpose flour
1 2-inch piece fresh ginger
½ cup light soy sauce
1 bunch scallions
¾ pound ground pork (from shoulder; not lean)
1 3 1/4-inch round cookie cutter

Stir together flour and 1/2 cup lukewarm water in a bowl until a dough forms.
