Ingredients

  • 1 tablespoon lemon zest
  • 1 teaspoon lemon juice
  • 3 teaspoons kosher salt
  • ¼ teaspoon freshly ground black pepper
  • Lemon Asparagus
  • 1 tablespoon olive oil
  • 1 cup chicken broth

    • 1 1-pound pork loins, cut into 10 cutlets, then pounded to 1/8 inch thick
    • 1 tablespoon unsalted butter

Heat the butter and oil in a large nonstick skillet over medium heat. Season the 10 pork cutlets with 2 teaspoons of the salt and the pepper.
