Potato, Pepper, and Chorizo Empañadas

Ingredients

  • ¼ teaspoon dried oregano
  • ½ green bell pepper
  • 1 red bell pepper
  • 2 tablespoons olive oil
  • 1 egg
  • ¾ cup Spanish chorizo (cured spiced pork sausage)
  • 3 garlic cloves
  • + 4 more ingredients
    • ½ pound yellow-fleshed potato such as Yukon Gold
    • 2 onions
    • ½ teaspoon salt
    • 1 Turkish bay leaf

Cook chorizo in oil in a 2 1/2- to 3-quart heavy saucepan over moderate heat, stirring, 2 minutes, then transfer to a medium bowl with a slotted spoon.
