  • 3 pound(s) bone-in pork shoulder roast
  • 1 red onion, cut up (large)
  • 2 jalapenos, seeded and chopped
  • 2 tablespoon(s) ground black pepper
  • 2 teaspoon(s) kosher salt
  • 2 teaspoon(s) cumin
  • 1 jar(s) Apricot Preserves

Place pork shoulder on a wide sheet of aluminum foil. Mix spices together and rub on roast. Coat the entire roast with the apricot preserves. Place onion and jalapenos around the roast.
