Roast Pork Tenderloin with Fresh and Dried Fruit

Ingredients

  • 4 large shallots
  • 2 1-pound pork tenderloins
  • 2 ½ teaspoons fresh rosemary
  • 2 tablespoons olive oil
  • 1 ½ cups low-salt chicken broth
  • ¾ cup dried apples
  • ½ cup fresh cranberries or frozen
  • + 2 more ingredients
    • ½ cup dry white wine
    • ¼ pound kumquats

Preheat oven to 375°F. Sprinkle pork with 2 teaspoons rosemary, salt, and pepper. Heat oil in heavy large ovenproof skillet over medium-high heat.
