Spicy Ground Pork Stuffed Acorn Squash
Ingredients
- ½ cup fat free sour cream
- ½ tsp black pepper
- 1 tsp salt
- 1 tsp ground chipotle seasoning
- 1 tsp paprika
- 1 tbsp cumin
- 2 tbsp tomato paste

- 1 28oz can diced tomatoes
- 3 garlic cloves, minced
- 1 small onion, minced
- 1lb extra lean ground pork
- 2 medium sized acorn squash, halved and de-seeded
