Ingredients

  • ¼ cup sliced green onions
  • 2 tablespoons natural peanut butter (such as Smucker's)
  • 1 tablespoon low-sodium soy sauce
  • 2 cups hot cooked rice
  • 2 teaspoons dark sesame oil
  • 1 (1-pound) pork tenderloin, cut into 1-inch pieces
  • 2 teaspoons minced peeled fresh ginger
  • + 3 more ingredients
    • 3 garlic cloves, minced
    • 1 red bell pepper, cut into strips
    • 1/3 cup picante sauce

Heat oil in a nonstick skillet over medium- high heat. Add pork, ginger, and garlic; stir-fry 1 minute. Add bell pepper; stir-fry 2 minutes.
