White Bean and Pork Chili
Ingredients
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 2 medium carrots, chopped
- 2 medium celery stalks, chopped
- 2 large garlic cloves, minced
- 1 pound pork sirloin cutlets, cut into ½-inch dice
- Salt and freshly ground pepper

- ½ teaspoon dried oregano, crumbled
- 1/8 teaspoon ground sage
- 1 cup beef broth
- 1 14 ½-ounce can peeled tomatoes (undrained)
- 2 15-ounce cans cannellini or Great Northern beans, rinsed and drained
- Grated cheddar and/or Monterey Jack cheese
- Minced fresh cilantro
