Ingredients

  • 3 tablespoons vegetable oil
  • 3 large eggs, lightly beaten
  • Salt and pepper
  • ½ cup all-purpose flour
  • 1 ½ cups panko or other coarse bread crumbs
  • 3 tablespoons unsalted butter
  • 1 ½ pounds pork medallions, pounded to 1/4-inch thickness

1. Place flour, eggs and panko in 3 separate shallow bowls. Sprinkle pork with salt and pepper. Dip each medallion first in flour, then egg, then panko. 2.
