A NO EGG EGG SALAD SANDWICH

Ingredients

  • ¾ cup(s) Japanese sliken firm tofu (6 ounce)
  • ½ teaspoon(s) fresh lemon juice
  • 1 teaspoon(s) prepared yellow mustard
  • ½ teaspoon(s) honey
  • ¼ teaspoon(s) turmeric
  • 1 tablespoon(s) onion, diced
  • 1 teaspoon(s) parsley, chopped
  • + 3 more ingredients
    • dash of paprika
    • salt and pepper to taste
    • 1 tablespoon(s) celery, diced

Crumble the tofu in a mixing bowl with a fork. Add all of the remaining ingredients and stir to combine. Taste; season to taste. Spread on favorite bread. Refrigerated, it will keep for 2-3 days. Makes 2-3 servings.
