  • 1 (28-ounce) can diced tomatoes, undrained
  • 2 teaspoons canola oil

    • 1 ¼ cups thinly sliced yellow onion
    • 2 ½ cups quartered small red potatoes (about 1 pound)
    • 2 teaspoons canola oil
