Ingredients

  • 2 tablespoons chopped green onions
  • ½ cup canola mayonnaise
  • ½ teaspoon freshly ground black pepper
  • 5 medium Yukon gold potatoes (about 2 pounds 6 ounces)
  • 1 tablespoon kosher salt, divided
  • 3 large hard-boiled eggs, diced
  • 2 tablespoons chopped green onions
