Amaretti Stuffed Peaches

Ingredients

• ½ stick unsalted butter, softened
• 1 cup coarsely crumbled amoretti
• 2 ½ Tbsp. whole wheat flour
• 2 Tbsp. sugar
• ¹/₈ tsp. salt
• 1 large egg
• 8 firm, ripe small peaches, halved lengthwise and pitted

1. Put oven rack in middle position and preheat oven to 350 degrees. Melt 2 Tbsp. butter and pour into a 13 x 19 inch glass or ceramic baking dish.
