Amaretti Triple Deckers

Ingredients

• 1 cup butter or margarine, melted
• ½ cup semisweet chocolate mini-morsels
• ¼ cup butter or margarine, softened
• 2 cups chocolate wafer crumbs
• ¼ teaspoon salt
• ½ cup finely crushed amaretti cookies
• ½ cup flaked coconut
• + 10 more ingredients
• • 2 large eggs, lightly beaten
  • 2 ¾ cups sifted powdered sugar
  • 2 tablespoons milk
  • ¼ teaspoon almond extract
  • 1 ¼ cups graham cracker crumbs
  • 1 ½ teaspoons vanilla extract
  • 1 (1-ounce) square semisweet chocolate, melted
  • ¾ cup slivered almonds, toasted and chopped
  • 20 amarettini cookies (miniature amaretti cookies)
  • ½ cup sugar

Combine first 5 ingredients in a heavy saucepan. Cook over medium-low heat, stirring constantly with a wire whisk, 12 to 15 minutes or until mixture reaches 160° and is slightly thickened.
