Ingredients

  • Butter or margarine for the moulds
  • Siúcra granulated sugar for greasing the moulds
  • 150g raspberries
  • 100g Siúcra granulated sugar
  • 4 egg whites
  • salt and freshly ground black pepper
  • 15g (½ cup) chopped fresh coriander
  • + 19 more ingredients
    • 1 ripe avocado, diced
    • zest and juice of 2 limes
    • 2 tbsp chopped peppadews
    • 250g cherry tomatoes, halved
    • ½ small red onion, finely diced
    • 1 papaya, peeled and cubed
    • 1 x 200g tin of sweetcorn, rinsed and drained
    • 1 x 400g tin of black beans, rinsed and drained
    • 2 tsp chilli powder
    • 1 tbsp agave syrup or honey
    • 1 tbsp ground coriander
    • 1 tbsp ground cumin
    • 2 tbsp sunflower oil
    • small bunch of fresh coriander stalks
    • juice of 3 limes
    • 125ml (½ cup) tomato paste
    • 2 limes, halved
    • salt and freshly ground black pepper
    • 4 thick tuna steaks

Mix all the marinade ingredients together and reserve 2 tablespoons for basting. Cover the tuna steak with the marinade and leave for 20 minutes.
