Anya Potato Salad with Shallots and Vinaigrette

Ingredients

  • freshly milled black pepper
  • 5 fl oz (150 ml) extra virgin olive oil
  • 1 tablespoon sherry vinegar
  • 1 tablespoon balsamic vinegar
  • 1 rounded dessertspoon mustard powder
  • 2 cloves garlic, peeled
  • 1 rounded dessertspoon sea salt
  • + 4 more ingredients
    • salt
    • 4 tablespoons freshly snipped chives
    • 6 shallots, peeled and finely chopped
    • 2 lb (900 g) Anya or other new potatoes, washed

Steam the potatoes over a pan of boiling, salted water, covered with a lid, for about 20 minutes until they are tender.
