Ingredients

  • 6 tablespoons unsalted butter, cold and cut into pieces
  • 1 pound Cortland, Empire, or McIntosh apples
  • 3 tablespoons solid vegetable shortening, cold
  • 2 ½ teaspoons ground cinnamon
  • 8 tablespoons (1 stick) unsalted butter, cold and cut into pieces
  • 3 to 6 tablespoons ice water

    • ¼ cup fresh lemon juice
    • 1 ½ teaspoons granulated sugar
    • 1 ¼ cups all-purpose flour, plus more for the work surface
    • For the topping:
    • 1 teaspoon ground cinnamon
    • 1 cup all-purpose flour
    • ¼ cup granulated sugar
    • For the crust:
    • 2 pounds Granny Smith apples
    • ½ cup (about 2 ounces) walnuts, finely chopped
    • Pinch of kosher salt
