  • 2-½ to 3 lb. (about 7) firm, tart apples (like Cortland, Jonagold, or Sierra Gold), peeled, cored, and cut into 1/3-inch slices (about 7 cups)
  • ½ cup water
  • ¼ cup granulated sugar
  • 7 oz. (14 Tbs.) cold unsalted butter, cut into ½-inch pieces
  • 1-½ oz. (3 Tbs.) cold vegetable shortening, cut into ½-inch pieces
  • 3 Tbs. all-purpose flour
  • 7 to 8 Tbs. granulated sugar
  • + 8 more ingredients
    • ½ tsp. table salt
    • 1 tsp. ground cinnamon
    • ¼ cup heavy cream or milk
    • 1 egg yolk, beaten
    • 3 Tbs. ice-cold water
    • 10 oz. (2-¼ cups) all-purpose flour
    • 1 cup (about 6 oz.) dried tart cherries
    • ½ tsp. granulated sugar
