- 2 Tbs. water
- Juice of ½ lemon
- 2 Tbs. granulated sugar (optional)
- 1 tsp. pure vanilla extract
- 5 or 6 cooking apples, such as McIntosh, peeled, cored, and cut into ½-inch pieces
- ¼ tsp. ground cinnamon
Put all the ingredients in a medium saucepan, cover, and set over low heat. Simmer until the apples are soft, 20 to 25 minutes. Mash with a fork until the mixture is a chunky purée. (Or pass through a food mill for a smoother texture.) Let cool.
