Apricot Fool

Ingredients

• 3 cups peeled and mashed apricots
• Grated rind of 1 lemon
• ¼ cup Triple Sec or other orange-flavored liqueur
• 2 tablespoons sugar
• ½ (1-ounce) square semisweet chocolate
• 1 cup whipping cream

Combine apricots and liqueur in a large mixing bowl; stir well. Beat 1 cup whipping cream in a small mixing bowl until foamy; gradually add sugar, beating until soft peaks form. Fold sweetened whipped cream and lemon rind into apricot mixture. Spoon apricot mixture into 6 stemmed dessert glasses....
