Apricot Ginger Pear Parfaits

- 1 food mill fitted with medium disk
- 5 ounces dried apricots (preferably California)
- 4 teaspoons fresh ginger
- ½ cup water
- 3 tablespoons sugar
- 4 fresh lemon zest
- 1 3-inch piece cinnamon stick

- 6 firm-ripe pears
