Arctic Char with Pistachio Orange Vinaigrette
- 1 navel orange
- 2 tablespoons pistachios or pecans
- 1 scallion
- 1 tablespoon fresh lemon juice
- 3 tablespoons pistachio or pecan oil
- 4 6-ounce pieces arctic char fillet with skin
