Ingredients

  • 2 Tbs. chopped fresh cilantro leaves
  • 2 Tbs. chopped scallion greens
  • 1 to 2 fresh serrano or jalapeño chiles, thinly sliced crosswise
  • ¼ cup finely chopped unsalted dry-roasted peanuts
  • 1/3 cup soy sauce
  • 1/3 cup fresh lime juice
  • ½ to ¾ cup water; more to taste
  • + 4 more ingredients
    • ¼ cup granulated sugar; more to-taste
    • 2 cloves garlic
    • 2 Tbs. chopped fresh mint
    • 1/3 cup Asian fish sauce

Finely chop the garlic on a cutting board. Sprinkle 1 Tbs. of the sugar over the garlic and repeatedly scrape the flat side of the knife over the garlic to mash it to a paste.
