Asparagus Salad with Soft Poached Eggs, Prosciutto, and Lemon-Chive Vinaigrette

Ingredients

  • 1 pound asparagus, trimmed
  • 4 teaspoons chopped fresh chives (optional)
  • Cooking spray
  • 4 large eggs
  • 1 teaspoon minced fresh chives
  • ¼ teaspoon kosher salt
  • ¼ teaspoon Dijon mustard
  • + 6 more ingredients
    • 8 thin slices prosciutto (about 2 ounces)
    • ¼ teaspoon freshly ground black pepper
    • 2 ¼ teaspoons freshly grated Parmigiano-Reggiano cheese
    • 3 tablespoons extra-virgin olive oil
    • 1 ½ tablespoons fresh lemon juice
    • ½ teaspoon minced garlic
