Atlas Mountain Soup

Ingredients

  • salt and black pepper to taste
  • 1 tablespoon white sugar
  • 1 ¼ cups water
  • 1 lemon
  • 1 pound tomatoes, coarsely chopped
  • 1 large green bell pepper, sliced
  • 4 stalks celery, cut into ½ inch pieces
  • + 7 more ingredients
    • 1 pound ground lamb
    • 2 teaspoons paprika
    • 2 teaspoons ground cumin
    • 2 teaspoons ground cinnamon
    • 2 cloves garlic, minced
    • 2 tablespoons olive oil
    • ¾ cup chopped dried apricots

1. Soak the apricots in water for 2 hours or more until soft; drain. 2. Heat the olive oil in a large, heavy saucepan over medium heat.
