Avocado and Corn Salsa

Ingredients

  • 4 avocados
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • 1 teaspoon oregano
  • 3 tablespoon cider vinegar or white vinegar
  • ¼ cup lemon juice
  • 1/3 cup olive oil or vegetable oil
  • + 5 more ingredients
    • 5 garlic, minced
    • 1 onion, chopped
    • 1 red bell pepper, chopped
    • 2 (2 ounce) sliced black olives, drained
    • 16 ounce frozen corn kernels, thawed

Combine the corn, black olives, bell pepper and onion in a bowl and mix well. Combine the garlic, olive oil, lemon juice, vinegar, oregano, salt and pepper in a bowl and mix well.
