  • 125 g fresh egg whites

    • 7 whole egg whites
    • 2 (14oz) cans coconut milk (unshaken)
    • 1 c Coconut cream
    • 7 sheet Gelatin
    • Carrots sliced on a mandalin ( 2.5 x 4.5cm )
    • 400 g sugar
    • 600 g water
    • lime juice
    • Walnut Brittle
    • 3 oz walnut praline puree
    • 7 oz sugar
    • 7 oz glucose
    • 10 g salt
    • 10 g walnuts
    • cook sugar till light caramel
    • stir pinenut puree, nuts, salt
    • cool on silpat
