Ingredients

  • 4 pounds unpeeled baking potatoes
  • 1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese, divided
  • 3 cups fat-free milk
  • 2 teaspoons salt
  • ¼ teaspoon freshly ground black pepper
  • 1/3 cup butter
  • Cooking spray

Place potatoes in a Dutch oven, and cover with water. Bring to a boil; reduce heat, and simmer for 20 minutes or until tender. Drain. Cover and chill. Preheat oven to 350°.
